The kind of fish and chips that are cooked fresh when you order. My Dad always took me along to collect them and I remember how the smell filled the car. I loved them! Then we moved to Canberra and ugh. Pre-cooked fish (no choice in the type) fried again with the result being overcrisp oiliness Fish and chip nights stopped. There are now maybe 2 or 3 places in Canberra that do proper fish and chips, but the habit is broken. I still have fish and chips as often as I can manage when I am nearer the coast though.
